    It's about two seconds from the photo until the video begins

    As Johnny says, the video starts 2 seconds after the photo is taken.

    That’s not far for it to move in 2 seconds. Looks like the camera is in a good position for that location.

    You might try burst mode and see if 2 or 3 photos produces better results for you in that spot.

    Look at the time stamp on the photo, then the time stamp at the beginning of the video WHEN IT’S PLAYING. Although the thumbnail that you see is timestamped 4 seconds after the photo, the video starts 2 seconds before that. “Feels like” is not a measure of anything.

    The above three photos are screen shots taken from my iPad Pro 11, transferred to a Windows PC, resized to 800 * 600 or 800 * 599 to reduce the size so they can be uploaded and to add callouts before uploading here.

    I deleted the one I had to look, but the photo was of a yote as he entered the frame right to left, the video missed him all together, but got him coming back from out of frame to the left going back to the right.   Had he not done a Uturn it would have missed him all together.  He didn’t travel 20ft in 2 sec on a trot.   Also had a pic of a gator exiting a pond next to camera, video was a tip of the tail.  Cool feature, not very effective on moving targets like deer or yotes, works well on feeders and slow turkeys.

    I get pictures and video of moving vehicles on a road beside our camp. I’m old, fat, and slow and I can travel 20 ft in 2 seconds.

    I can assure you it's 2 seconds, you'd be surprised how much distance a critter can travel in two seconds, I've probably requested thousands of videos and it doesn't take long for them to cover the distance in front of the camera at a non running pace.
